Notes on Roast Levels

• City: Uncaramelized sweetness, highest acidity, lowest body; clearest taste of coffee origin

• City+: Balanced sweetness and acidity, medium body; our favored roast level for single-origin coffees

• Full City: Caramelized sugars, lower acidity, fuller body, some roastiness and increased bitterness/boldness

• Full City+: Reduced sweetness and acidity, increased roastiness and bitterness/boldness, lightly oily; our favored roast level for espresso

• Light French: Subdued sweetness and acidity, roasty and bitter/bold, oily beans; classic espresso roast level

• Dark French: Roastiness dominates, blend components might not be recognizable, beans very oily

why it works

Almost any mixture at any roast level will probably be tasty, because all of our source coffees are very high quality. Plus, we know these beans and how to roast them well. So, the chances of creating a really bad blend is extremely low. However, if we see something come in that looks risky, we will confirm with you before proceeding.
